Baingan Achari

acharibainganIngredients:

1/2 kg long Baingan ( Brinjals)

4 Tomatoes finely chopped

1 tsp ginger garlic paste

15-20 leaves Curry Patta (leaves)

1/2 Tsp Haldi (turmeric powder)

1 tsp red chilli

1 1/2 tsp Dhania (corriander powder)

1 tsp leveled salt or to taste

 1 tsp saunf (aniseed)

1/2 tsp kalonji (onion seeds or Nigella seeds)

1/4 tsp methi daana (Fenugreek seeds)

3/4 tsp rai (mustard seeds)

1/4 cup oil

Method:

Cut baingan into half, lengthwise and then into 1″ pieces. Deep fry or stir frythem as you like, till light brown. Heat oil, add ginger-garlic paste, curry leaves and stir for a minute; add all spices andfry for a minute. Add seasonings, with chopped tomatoes; cook (bhuno) well till oil separates, add fried baingan; cover and let it cook for 5 minutes. Serve Hot.
